The year 2023 marks the 125th since the founding of this restaurant by Pedrito Echaurren. Francis Paniego runs the kitchen today, and his menu includes many of the dishes, updated for contemporary palates, created by his mother, the legendary Marisa Sánchez. Don’t-miss dishes are the croquetas, the most famous in Spain, and the charcoal-grilled black pudding with tomato sauce. Mains range from meats from the Rioja hills to fish and seafood from the Basque Coast. The massive wine list is filled with top bottles from both Rioja and the Ribera del Duero.
