Bittor Arguinzoniz, often referred to as Victor, is the creator of high-grilled cuisine, employing a unique technique where he cooks over several types of wood that he cures in-house. The end result demonstrates that any ingredient can be cooked on a grill. Starting with excellent raw materials, he elevates grilling to an art form. The presentations are purposefully simple, allowing the ingredients to shine. Emblematic dishes include eel, caviar and the house-made chorizo, as well as one of the best steaks you will ever eat.
