During the Renaissance, Florentine companies and brotherhoods gathered in underground halls located in the city center. Such a place was called a buca (“hole”), a word that still appears in the name of many restaurants. Buca Lapi, with its fascinating roof decorations, is among the oldest of the bucas, offering strictly traditional cooking that features cooking all of the Florentine classics such as a good ribollita, an excellent trippa alla Fiorentina, and one of the best Fiorentina steaks in town.
