The miracle of Trippa was created by Diego Rossi and Pietro Caroli. A chef with a fine dining pedigree in his background, Rossi gave up luxury ingredients in order to cook what he calls “real food.”The daily menu balanceshis original creations,like deep fried tripe with rosemary,updated versions oftraditional dishes, including his amazing version of vitello tonnato and a focus on the vegetables of his native region which is just northwest of Verona. Though the wine listfocuses on natural wines, Pietro is a good listener and knows what to suggest.
