“Loste” combines the shortened names of Lorenzo (Cioli) and Stefano (Ferraro), who met at Noma, where Cioli was pastry chef. While the two openly discuss their intention to eventually open a fine dining restaurant, in 2021 they took their first step in that direction by opening this heavily Scandi-influenced bakery with great coffee and pastries, such as cinnamon rolls, cardamom-laminated dough pastry with coffee and orange glaze or pain au chocolat. There’s a tiny lunch menu of simple, seasonal dishes, such as fried eggs with white asparagus and black truffle.
