After a brief stint as the only-ever female judge on the Italian edition of MasterChef, Antonia Klugmann turned her back on television and went back to her kitchen at L’Argine a Vencò, a small country restaurant with a view that ventures beyond the vegetable garden outside its windows and past the vineyard-covered hills of the Collio region. A sense of place, a no-waste philosophy and a focus on plants are the key ingredients in a cuisine in which the chef crafts poetic, luminous dishes, such as risotto with fresh and dried peas and weeds, or king oyster mushroom, pomace and sorrel.
