Pam Brunton’s career has taken her from the French-inspired kitchens of Tom Aikens and Marco Pierre White to the modern era of Noma, Fäviken and De Superette. Since 2015, Brunton has cooked at Inver, her small restaurant on the shores of Loch Fyne. Menus center on produce available locally, be it Gigha halibut and foraged coastal greens or Isle of Bute lamb with greengages and Inver mustard. Overnight guests get the breakfast “picnic basket,” worth the journey in its own right.
